Adventures with Telstra #1

Telstra rep: hi welcome to Telstra my name is Damien, how may I help you?
Me: Hi my name is ___ and my address is ____ and I had a telstra technician come out on Saturday morning but he couldn't get into my apartment building's switchboard cupboard. I called the body corporate and they are going to unlock it so I am just calling up to reschedule.
Telstra rep: I see.. just hold on a second...
*hold music for 10 minutes*
Telstra rep: ok... now what was your name again?
Me: *quietly going argh and spelling out my name*
Telstra rep: Thanks for your name and address... now how do you spell Elizabeth Bay??
Me: *going more argh and spelling out Elizabeth Bay*
Telstra rep: ok.. what's a good time for you?
Me: Well the caretaker is only there on weekdays and in the afternoons...
Telstra rep: let me put you on hold..
*hold music for 15 minutes*
Telstra rep: ok.. your appointment is for the 9th at 8-12
Me: umm.. 8 is in the morning.. he is only there in the afternoon..
Telstra rep: well... I can't reschedule your appointment until he's been out there already..
Me: *wth?* surely you can reschedule my appointment for me??
Telstra rep: I will see what I can do..
*hold music for 15 minutes*
Telstra rep: Your appointment is on the 11th for 1 to 5..
Me: But that's a Saturday!!!!!
*big sigh from Telstra rep, me screaming quietly in the background, hold music for another 15 minutes*
Telstra rep: Alright, I have you down for Monday the 13th from 1 to 5.
Me: Perfect! Now can you put down in the notes to call Fred the caretaker for access?
Telstra rep: Hmmm.. I am not sure if we can put that down in the notes...
Me: *through gritted teeth* I used to work for you guys. Just scroll down to the notes section.
Telstra rep: Oooh I found the notes section.. so.. how do you spell Fred?
Me: F-R-E-D *thumping my head against the wall with each letter*

*Telstra rep takes down the rest of my details, I make him repeat everything he's promised, hangs up the phone and then I call Fred to let him know when Telstra will be coming..*

Me: So Fred, Telstra is coming on 13/4 from 1 to 5..
Fred: Umm.. that's Easter Monday..

*cue much swearing from me and another call back to Telstra. Thankfully I got to speak to Karl, not Damien who managed to fix everything up in 5(!) minutes.

last night's cottage pie lasagne experiment

Last night: Cottage Pie with potato crisp sprinkles was a big success. The ingredient list is a bit weird as I was trying to clear out my freezer at the same time, so feel free to substitute ingredients as desired ;) I love thumbing my nose at food snobs everywhere and having truffles in the same recipe as potato crisps ;p 

For the mince sauce:
400g of lean beef mince (I used 250g mince and 3 thawed broken up burger patties floating around the freezer, they added an awesome texture to the pie)
1 onion, finely chopped
1 carrot, finely chopped
1 cup frozen peas and corn
Leftover pasta sauce/gravy
1 tomato, diced

For mash:
2 large potatoes
45g of butter (I know this seems excessive, but mash is not mash at all without butter!)
1/4 cup milk/cream
Garlic infused olive oil (optional)
1 tsp truffles (optional)
Nutmeg
Pepper and salt

Topping
Cheese
Small bag potato crisps (we used sour cream and chives!)

Sweat onion in olive oil til soft then add mince and brown. Add in vegetables and leftover sauce and simmer.

Meanwhile, in large microwave bowl nuke potatoes til tender (I fill my bowl halfway with water, prick potatoes, cover with cling film and nuke for 12 minutes). Mash in with other ingredients and more salt than you think you need. It should be a silky puree by the time you are done.

Layer mince and mash in bowls and top with a final layer of mash, then sprinkle with tasty cheese and smashed crisp bits. Bake for 15 minutes on medium heat in oven, or 5 minutes in a microwave convection oven. The layers of mash and mince means the mince never gets too salty, and the potato crisps on top compensate for lack of crunchiness if baked in a microwave convection oven. For extra decadence, add in layers of white sauce between mince and mash.

Tonight: Either mystery meal or night off depending on what time the handyman leaves!
